Cranberry Oat Jack Recipe

One of my favorite coffee house treats in the oat jack. I have tried on a few occasions to find a recipe for this tasty afternoon treat, but with no luck. So in proper casual survivalist fashion, I came up with my own recipe. Enjoy!

 

Ingredients

  • ½ cup or 1 stick unsalted butter
  • 8 oz dried cranberries roughly chopped
  • ½ cup grapefruit or orange juice
  • 1 tsp fresh grated ginger
  • 2 pinches nutmeg
  • 1 cup brown sugar
  • 1 cup papitas (pumpkin seeds)*
  • ½ cup sunflower seeds
  • 1 cup oats
  • ¼ cup oat bran (or ground up oats)
  • ½ cup white flour
  • ½ cup wheat flour
  • 1 egg
  1. Preheat oven to 350°F
  2. Oil or butter muffin tray (12 muffin spaces)
  3. Melt butter in saucepan
  4. Add chopped cranberries, ginger, nutmeg, and juice
  5. grate the ginger right into the pan with the cranberries, butter, and juice

  6. Let simmer on low heat for 10 min. stirring occasionally – crans will get soft, mix will thicken
  7. In a large bowl, stir together warm cranberries, brown sugar, papitas, and sunflower seeds
  8. Slowly stir in oats, oat bran, and flour
  9. In a small bowl, beat egg
  10. Fold egg into mixture
  11. Scoop mix into greased muffin tin/s
  12. spoon the oat jack dough into the greased muffin tins

  13. Wet finger tips and press mix down firmly
  14. Bake for 30 min and then dump out onto a cooling rack
  15. the kitchen smells soooo good right now!

 

Cranberry oat jacks are delicious warm, room temp, or cold – really delicious with coffee or tea!  

Oat Jacks are also an excellent snack to bring on a hike or long trip.

 *A note about salt:  the seeds provide the salt in the recipe.  If you want low or no salt, use low or no salt seeds!
